The young Sous Chef at Pizzorante demonstrates the restaurant's simple and authentic italian style of cooking and shows how you can re-create it at home. Shady's previous experience in some of Londons finest italian restaurants includes working with Giorgio Locatelli.

Julie Carey heads up the kitchen team at Glen-yr-Afon House Hotel which enjoys an enviable reputation for the dining experience in Clarkes restaurant and for the specialist wedding service they have offered for over 30 years, gaining them the title of Best Wedding Venue in Wales at the 2011 Welsh Wedding Awards.

James Sommerin – The Crown at Whitebrook
James Sommerin has held a Michelin star at The Crown at Whitebrook since 2007. The Good Food Guide 2012 rates The Crown as ‘world class' and best in Wales. This year James again represented Wales in Great British Menu.

61p is the ingredients budget for a two-course school dinner. Monmouthshire schoolchildren have been working with Jeanette Orrey – aka The Dinner Lady – in a competition to produce the best idea for a healthy school dinner within that budget. Penny earned her spurs, travelling the globe cooking for dignitaries, celebrities and royalty. She runs The Culinary Cottage Cookery School which offers a variety of courses for up to six students at a time - there is no better way to learn.

Karl Cheetham – Head Chef, Gliffaes
Karl Cheetham is completely at home with the Gliffaes' commitment to local food, low food miles, seasonality and sustainable fisheries. Gliffaes Country House Hotel is the only 4-star hotel in the Brecon Beacons and was named Welsh Country Hotel of the Year in 2009.

The grand finale of the Food Festival's exciting Grow your Own Pizza competition for the area's Comprehensive schools. Not only have students had to come up with a unique Welsh take on a pizza, they have also had to grow as many ingredients for it as possible. Festival favourite chef Cyrus Todiwala will crown the winner!

Mattthew Dawkins – The Star Inn at Llansoy
Local talent Mathew Dawkins trained at Crosskeys College and represented Monmouthshire on ITV's Taste the Nation. His ambition as a young Head Chef is to achieve a first rosette and put The Star back on the map as the place to eat in South Wales.
