The Frenchman who is a British food hero and the Englishman who flies the flag for proper cuisine bourgeoise demonstrate that the entente cordiale is alive and well. Richard Bertinet runs The Bertinet Kitchen Cookery School in Bath and is the BBC Food Champion of the Year 2010. Henry Harris is chef-patron at Racine, the neighbourhood bistro that you would love to find in France.

Trina Hahnemann runs a successful catering business in Copenhagen. She is Denmark's best-known food writer and the author of The Nordic Diet. Young, London-based food writer Signe Johansen has gathered a huge following for her blog Scandilicious [www.signejohansen.com] and has recently published Secrets of Scandinavian Cooking: Scandilicious a Fresh Take on the Scandinavian Classics.

His first book, Bryn's Kitchen, has been hailed as one of the must-have cookery books of the year.

Three stars of the gastronomic firmament reflect on the gourmand's eternal problem – how to mitigate the effects of indulgence. Fergus Henderson is chef proprietor of St John and the architect of ‘nose to tail eating'; Shaun Hill is chef proprietor of the Michelin-starred Walnut Tree Inn; Chris Hirst is a journalist and author of the much-loved Weasel columns in The Independent. Drawing on the weight of their combined experience, they will advocate strategies, reveal recipes and demonstrate the mixing of proprietary elixirs. All over-18's in the audience will have the chance to sample Dr Henderson's recommended pick-me-up.

José Pizarro was co-founder of the highly successful Brindisa Tapas Kitchens and is the author of Spanish Seasonal Food.
