Matt and Anne Scott became millers when they took over The Watermill at Bacheldre in 2002, one of only two flour-producing watermills in the country. The slow and gentle milling using the ancient grinding stones allows them to produce a 100% welsh organic flour whose exceptional quality has won many awards. Here Matt explains grain selection, the milling process, and samples the 10 different types of flour they now produce.

Charles Carey’s conversion from sheep-farmer to olive oil importer was, by his own admission, impulsive. He just got in the car and drove to Tuscany and loaded it up at the local co-operative press. That was back in 1984. He is credited with having sparked off a new interest in Estate Bottled Olive Oils which he now imports from all around the world. Here he introduces some of his favourite olive oils along with aged balsamic vinegar.
