Innovative ex-chef James set up the award-winning Cabrito Goat Meat Company to deal with the ‘ridiculous waste’ of male kids coming out of the goat dairy industry. His new book The DIY BBQ Cookbook addresses another waste: all those shop-bought foil barbecues you don’t need – to cook goat or anything else.
He will be joined by Emma Douglas from Gower Meadow Beef who is supplying a full rib of pasture-fed beef for this event. She’ll talk about her produce while James cooks up a storm. The Douglas Family raise their herd of Welsh Black cattle entirely on grass at Penmaen in the heart of Gower.
