Josh Byrne

Josh is Head Chef and co-owner of The Black Bear Inn, Bettws Newydd in the Usk Valley along with his wife Hannah. The Black Bear is a village pub and restaurant serving a concise, ever changing à la carte menu using the best possible locally sourced and sustainably produced ingredients, alongside a carefully chosen selection of organic/biodynamic/natural wines from around Europe.

Josh started his career in Heston Blumenthal’s Hind Head in Bray aged 17 on a whim, keen to find more interesting way to save money for a gap year than stacking shelves in a supermarket. Thanks to the head chef at the time taking a punt on someone with zero experience, Josh got his start in a professional kitchen and fell in love with it almost instantly. Since then he has worked across Europe in Michelin starred restaurants in Rotterdam, Stockholm, London and finally Paris where he met Hannah.

After two years working in Bristol, together they have settled in the Usk Valley and opened the Black Bear Inn. The cooking at the Black Bear is restrained and simple, to best showcase the carefully sourced ingredients. Josh and Hannah share a passion for the environment and work hard to run The Black Bear as sustainably as possible and have already begun work on a kitchen garden.
