Sara Sanna’s passion for Mezcal has led her to project managing the opening of Masa + Mezcal. As the Name suggests, mezcal which is made from roasting, fermenting, and distilling the many varieties of the agave plant is the focal point of the drinks menu. With its well-known smoky flavour mezcal is being tipped by industry experts as being one of the most exciting drinks categories that will take the UK by storm in 2019.
The mezcal selection at Masa + Mezcal, which is over 100 strong at the point of opening, has been put together Sara, Masa + Mezcal’s head ‘Mezcalera’. Sara serves mezcal straight up, in flights, to help guests explore the flavour profiles such as fruit, stone and earth or as the staple ingredient of the cocktail menu.
Sara has a diploma certificate from the The Consejo Regulador del Tequila and has travelled extensively in Mexico to Oaxaca, Jalisco and Tequila visiting distilleries and mezcal palenques where she helped with the production of mezcal.
