Festival favourite Cyrus Todiwala gets things started with recipes from his brand new cookbook Modern Indian. Cyrus grew up in Mumbai and was executive chef for the prestigious chain of Taj Hotels. He opened his own restaurant Café Spice Namaste in London in 1995 where he is credited as being one of the pioneers of modern Indian cooking in the UK.
