Tom Waters is the chef-patron of Gorse, which was awarded Cardiff’s first Michelin Star this year. Originally from South Wales, Tom’s journey to opening his Pontcanna restaurant has been by way of some of the UK’s best kitchens – from Odette’s, The Square and Bonhams to the leadership team at Heston Blumenthal’s The Fat Duck. His ingredient-led modern Welsh cooking showcases the best local produce, drawing in guests from across the country and further afield.
