The beers are from Luke Manifold’s Lucky 7 Beer Co in Hay-on-Wye and the cheeses are from Carwyn Adams’ Caws Cenarth dairy in West Wales. Additional expertise comes from Pete Brown, Sunday Times Beer Columnist, and from Ned Palmer, author of A Cheesemonger’s Compendium of British & Irish Cheese.
